Tray meal saves the day when you’re low on time + energy but also don’t want to go out to eat. Throw together in minutes, pop in the oven, and you’re ready to go!

Savory fries, slightly crisp peppers, and lemony mahi mahi = the perfect quick combo.

Recipe

30 minutes | 3-4 servings

Ingredients

  • coconut oil spray

  • frozen mahi mahi (I cook from frozen and rarely ever (never) defrost)

  • red + green bell peppers, sliced

  • ½ onion, sliced

  • 1 large sweet potato, cut into fries

  • 1 lemon

  • olive oil

  • salt

  • basil

  • Trader Joe’s BBQ seasoning

Directions

  1. Preheat oven to 425 degrees F. Spray baking sheet with coconut oil.

  2. Place mahi mahi, peppers + onions, & sweet potatoes on the tray.

  3. Drizzle everything with olive oil + salt.

  4. Sprinkle mahi mahi & peppers + onions with basil and squeeze of lemon (I like to add slices on top as well).

  5. Sprinkle BBQ seasoning on sweet potato fries.

  6. Bake for 20-30 minutes.

  7. Enjoy!
