Simple Pumpkin Pancake

Gluten-free + free of refined sugar. Pumpkin adds fiber, which helps keep your blood sugar stable + digestive tract happy and vitamin A for a healthy immune system + eyesight.

It’s light, fluffy, sweet + savory and will make your house smell like fall.

Recipe

15 minutes | 1 large pancake

Ingredients

  • 1/4 cup almond meal

  • 1/4 cup coconut flour

  • 1/2 cup Trader Joe’s gluten-free flour

  • 2 Tbsp ground flax

  • 1 scoop Vital Proteins collagen peptides

  • 1 egg

  • 1/4 cup pumpkin purée 

  • 1-2 tsp pumpkin spice

  • 1 tsp baking soda

  • Toppings:

    • apple butter

    • Fourth & Heart vanilla ghee

Directions

  1. Mix all ingredients together. Heat a skillet over medium-high heat. Add coconut oil. Pour batter into skillet and cook evenly on both sides (flip when batter starts to bubble).

  2. For blueberry sauce: In a small saucepan heat frozen blueberries until it forms a sauce.

  3. Top pancake with toppings.

  4. Enjoy!
